For the sauce:
½ cup mayonnaise (can be dairy free/vegan mayo)
1 TBSP drained capers
1 TBSP dijon mustard or horseradish mustard
1 TBSP fresh dill
1 TBSP fresh lemon juice
Salt and pepper to taste
For the tuna cakes:
1 ten-ounce can albacore tuna, drained and flaked
¾ cup breadcrumbs (gluten free breadcrumbs will work well also)
1 garlic clove, peeled and minced
1 large egg, beaten
¼ tsp each salt and pepper
½ fresh parsley chopped
4 TBSP olive oil for frying
Instructions for making the sauce:
Whisk all ingredients until smooth.
Set aside while you prepare the tuna patties.
Instructions for frying the tuna patties:
In a medium bowl stir to combine the mayonnaise, Dijon mustard, minced garlic, egg, salt, pepper and parsley.
Add the drained tuna and breadcrumbs to the bowl and stir to combine.
Heat the olive oil in a large nonstick skillet over medium heat.
Form the tuna mixture into 8 patties.
When the oil forms small bubbles, you are ready to add the tuna cakes.
Cook until golden brown on each side (about 3 minutes per side). If your skillet isn’t large enough for all of the patties feel free to cook in batches.
Serve on a platter or individual plates with the creamy horseradish sauce. Garnish with lemons if desired.
Note:
These are wonderful as an appetizer or starter for any meal. They are also a perfect lunch. Just add a salad and Bon Appetit!
