Lemon Feta Vinaigrette

(with suggestions for making the recipe gluten and dairy free)

Ingredients:

¼ cup extra virgin olive oil

¼ cup freshly squeezed lemon juice 

¼ cup feta, crumbled (I use dairy free feta by Follow Your Heart)

1 clove garlic,minced

1 TBSP Dijon mustard (check for GF designation on packaging)

1 TBSP honey

1 tsp dried oregano (check for GF designation on packaging)

2 tsp lemon zest 

¼ tsp each salt and ground black pepper


Directions:

In a salad dressing shaker or mason jar, combine all of the ingredients and shake to combine.
