Hearts of Palm Salad

Ingredients:

3 TBSP extra virgin olive oil

2 TBSP mayonnaise (can be plant-based mayo)

Zest of a lemon

Juice of half of a lemon

1 TBSP Dijon mustard, stone ground mustard, or whole grain mustard

¼  tsp each salt and black pepper

1 (14-ounce) can hearts of palm, drained and sliced in ½-inch slices

1 cup cherry or grape tomatoes, sliced in half 

1 cup celery, diced

½ cup radishes, sliced thinly

1 small shallot, minced

¼ cup parsley, chopped

Instructions:

  1. In a large bowl, combine the olive oil, mayonnaise, lemon juice, mustard, salt, and pepper. Whisk until combined.

  2. In the same bowl, add the rest of the ingredients and toss to coat with the dressing.

  3. Check seasonings, and adjust as needed. 

  4. Cover and chill in the refrigerator for a few hours before serving. Store in the refrigerator for up to 3 days. 

Note:

Hearts of Palm are high in fiber and a part of a heart-healthy diet. They also provide potassium, iron, copper, phosphorus, zinc, B6, vitamin C and folate.
