Ingredients:
1 cup extra virgin olive oil
1 tsp Dijon mustard
Juice from 1 lemon
¼ cup red wine vinegar
3 cloves garlic, minced
1 tsp dried oregano
½ tsp onion powder
¼ tsp each salt and freshly ground black pepper
1/3 cup crumbled feta cheese (can be dairy free feta, such as Follow Your Heart)
Directions:
In a medium bowl, add the Dijon mustard, lemon juice, red wine vinegar, minced garlic, dried oregano, onion powder, salt and pepper. Whisk to combine. Drizzle in the olive oil, then whisk to combine. Stir in the feta and set aside.
The Greek Vinaigrette can be stored in the refrigerator for a few days. Set out of the refrigerator 30 minutes before ready to serve.
