Cinnamon Vanilla Waffles

(Gluten & Dairy Free)

Yield: 8 servings 

Prep Time: 15 minutes + 15-20 minutes for batter to rest

Cook Time: 25 minutes

Total Time:  75-80 minutes

 

Ingredients:

2 cups all-purpose gluten free flour (I use Bob’s Red Mill)

1 cup 1-to-1 flour (I use Bob’s Red Mill)

½ tsp vanilla

½ tsp cinnamon

½ tsp baking soda

½ tsp kosher salt

½ tsp baking powder

2 TBSP sugar

3 TBSP dairy free butter (I use the olive oil by Country Crock)

5 TBSP grapeseed oil (for use on the waffle maker to prevent waffles from sticking)

2 large eggs at room temperature

1-¾ cups almond milk 


*I use the Cuisinart Round Classic Waffle Maker that I bought at Sur La Table. It is a great price and value. It’s very consistent and reliable. 

Directions:

  1. Preheat your waffle maker to medium-high heat (mine has levels 1-5, and I use level 4 for making waffles). Preheat the oven to 200 degrees and have a sheet pan ready so you can put waffles into the oven as they come off of the waffle maker. 

  2. In a mixing bowl, whisk the egg, then add the melted dairy free butter, vanilla, and almond milk. 

  3. In a large mixing bowl, add the flour, baking soda, salt, baking powder, sugar, and cinnamon. Whisk to combine. Add the contents from the other bowl and whisk to combine. Let sit for 15-20 minutes while you prepare the waffle maker and any other preparations like fresh fruit, syrup, etc.

  4. Once the mix has rested, use a brush to coat the waffle maker grates with grapeseed oil. This prevents the waffles from sticking. Do this before making every waffle.

  5. Use a ½ cup measure and evenly distribute the batter on the waffle maker. Once it is spread evenly, close the waffle maker to let it cook. My waffle maker has an indicator light that is red while it cooks and green when the waffle is ready. Continue until all the waffle mix is used. I get 8 waffles from this mix using my waffle maker. It will vary depending on the size of your waffle maker. 

Notes:

  • Can be stored in the refrigerator for a few days then warmed in the oven at 300 degrees for 10 minutes. 

  • You can also store them in the freezer for 3 months. 

  • I love to top waffles with maple syrup and more dairy free butter and have honey and fruit available as well.
